Pasta in red sauce

Ingredients

  • 1 1/2 cup cooked pasta;
  • 2 cups chopped tomato;
  • 1/2 cup chopped onion;
  • 1 1/2 tsp chopped garlic;
  • 1/2 cup chopped capsicum;
  • 2 tbsp olive oil or oil;
  • 2 tejpatta (bay leaves);
  • 3 tbsp readymade tomato puree;
  • 1/2 cup tomato ketchup;
  • 1 tbsp dried oregano;
  • 1 1/2 tbsp dry red chilli flakes;
  • 1/2 tbsp sugar;
  • 1/4 cup fresh cream;
  • 1 tbsp grated cheese;
  • salt to taste.

Method

  • Heat oil in a non-stick pan, add the Tejpatta(bay leaves) sauté on a medium flame for 30 seconds;
  • Add the onions and garlic and sauté on a medium flame for 2 mins;
  • Add the capsicum and sauté on a medium flame for another 1 to 2 mins;
  • Add the tomatoes and salt, mix well and cook on a medium flame for 4 to 5 mins;
  • Add the tomato purée, tomato ketchup, oregano, chilli flakes and sugar, mix well and cook on a medium flame for 1 mins;
  • Add the cream, mix well and cook on a medium flame for another 1 to 2 mins;
  • Now add the pasta and cook on a medium flame for 2 more mins;
  • Garnish with grated cheese and fresh cream and serve immediately.
